How to bake Parkin

For those of you who have pm me asking how its done this recipe as been in my family for years took my mum about 2 years to get it spot on!!


Parkin .....use a cup not a breaker.....4 x cups wholesale flour....1 n half x cups Brown sugar....4 x heaped teaspoons mixed spice....4 x level teaspoons ginger.....mix all this together in a mixing bowl.....melt half a tub of marg in a pan with 4 x heaped tablespoons of black treacle or syrup and 1 x cup of milk .....add contents of pan to mixing bowl n stir.....it makes 2 cakes......it is much nicer made with black treacle than syrup.....cook for about 40 mins n test by standing a knife up in the centre...if it comes out clean its cooked.

I stick mine on low heat chief when baked put it in tins to keep it and the longer you keep it the better it tastes I leave one in tin for about a week let it dry out and its yummy 🍰😝
